Barlow Blackened Catfish INGREDIENTS: 2 teaspoons cayenne pepper 2 Tbsp Tea with lemon pepper 2 tbsp tea garlic powder 2 teaspoons salt, 2 tablespoons Coffee pepper 1 lb. fish fillets catfish salad * * 2 tablespoons butter * 1 cup Italian dressing Preparation: 1. Preheat oven to 350 degrees F (175 degrees C). Slightly flat cooking grease half. 2. In a low, medium bowl, combine cayenne pepper, lemon pepper, garlic powder, salt and pepper. 3. Brush both sides of fillets of catfish with butter. Rub the fillets with the mixture of pepper spray on both sides. 4. Heat a large skillet over medium-high heat until very hot. Add fillets and fry about 2 minutes per side, until slightly blackened. 5. Place the blackened fillets in a single layer in prepared pan, and coat with salad in Italian dressing. Bake for 30 to 35 minutes in preheated oven until fish flakes easily with fork. Blackened INGREDIENTS Catfish: * 6 nets U.S. catfish farming * 1 / 2 teaspoon garlic powder * 1 teaspoon cayenne pepper 1 tsp Tea black pepper 1 teaspoon salt 1 tablespoon dried thyme, crushed 1 / 2 teaspoon paprika * 1 / 2 cup butter 1 / 4 cup dry white wine * Juice of one lemon Directions: 1. Wash fillets and catfish dry. Set aside. Combine all ingredients in dried a small bowl and set aside. 2. Melt the butter in a skillet. Add lemon juice and mix well. Dip the fillets with the butter mixture. Sprinkle fillets generously with the spice mixture on both sides and set aside. 3. When you're ready to cook, heat a black iron skillet on the fire until a very hot day. Carefully place the fillets in the pan and cook 2 minutes per side. Stay mobile with a spatula to prevent sticking. When the nets are cooked, remove from pan. Remove saucepan from burner. Pour butter mixture into the pan, quickly add the wine and stir. Pour cooking juices over the fillets and serve immediately. Blackened Catfish have always been a fan of catfish. We lived in Baton Rouge, LA several years ago and I became a fan blackened catfish.
